I discovered this recipe last ramadan, and I'm just sat here wondering if I should wait till ramadan comes again to re-make it! I keep telling everyone about how amazing it is! So here is the recipe below for the most amazing date cake.
What you will need:
· 85g Unsalted Butter
· 225g Soft Dates (eg. Medjool) pitted and finely chopped
· 250ml of hot coffee (1-2 tsp of instant coffee mixed with hot water)
· 225g All Purpose Flour
· 1 tsp Baking Soda
· 1 tsp Baking Powder
· ½ tsp Salt
· 125g Brown Sugar
· 2 Eggs
· 1 tsp Vanilla Extract
TOFFEE SAUCE (Optional)
· 125g unsalted butter
· 170g Brown Sugar
· 190ml Heavy Cream
· ½ tsp Salt
Preheat oven to 180 degrees and line a 9-inch pan with butter
Stir together the chopped dates and coffee in a small bowl and set aside
In a separate bowl combine the flour, baking soda, baking powder and salt and set aside
Cream the butter and brown sugar together until creamy and light. Gradually add eggs and vanilla and beat for several minutes
Stir in ½ the flour mixture, followed by the date and coffee mixture then the rest of the flour. Cook in oven until the cake has cooked through (took my over approx. 30 minutes)
STEP 6 (Optional)
To prepare the toffee sauce, combine butter, brown sugar and cream in saucepan over medium heat. Stir constantly until the mixture melts and bring it to a boil.
Reduce flame to medium-low and boil for 5 minutes until the mixture thickens. Add the salt and vanilla extract.
Pour the toffee sauce over the cake. Serve with vanilla ice-cream.
